Team

General Manager

SAMANTHA LAPOINTE

Samantha hails from the Island of Oahu in Hawaii, originally swept here to study French horn in Florida then at Rice university. After an 11-year tenure as second horn in the Louisiana Philharmonic Orchestra, Samantha was faced with a career ending injury. Good thing, she always wanted to be a server! Commanders Palace hired her despite being a delicate flower that knew nothing about restaurants. Ten years later and having transformed into a cactus, she heard through the grapevine that Mark Latter was looking for a General Manager to open Birdy’s Behind the Bower. Samantha dove in headfirst as she does and thus started her relationship with Latter Hospitality. Fast forward to 2026 and she is back on the team to realize Latter Hospitality’s newest venture. Hospitality brings her joy and she hopes to bring that spirit to Charles and Julia.

ALLY O’KEEFE

Beverage Director

Ally is born and raised in New Orleans. She began in the service and hospitality industry at the age of 18 as a server while also pursuing degrees in Psychology and Digital Design. She spent some time in Boston in the service industry before returning home to New Orleans. In 2021, she began to spend less time with tables and more time behind the bar where she found her true passion. Ally worked for the Latter Hospitality Team at The Bower behind the bar for a few years, before moving on to take on Bar Manager and Beverage Director roles at other locations including King Brasserie and Hot Tin at The Hotel Pontchartrain. She is very excited to lead the bar program at Charles & Julia with her talent for reinventing classics in a fun and customer-friendly way.

AUM WIPOP

Chef de Cuisine

Chef Aum holds a degree in Culinary Arts and Kitchen Management. He completed a two-year internship with Marriott where he gained hands-on experience in professional kitchen operations. He is experienced in both Asian and Western cuisine, with a strong foundation in diverse cooking techniques and flavors. Chef Aum joined the Latter Hospitality Team in 2024 at The Bower as a line cook. He quickly impressed with his culinary skills. We are very excited to have him take the next step as Chef de Cuisine at Charles & Julia.
